C45 is a carbon steel (not stainless): it takes an excellent edge but must be kept sharp and protected from moisture with a thin film of food-grade oil to prevent oxidation. Check the dimensions — in particular the 25.4 mm hole and the 4 fixing holes — before purchasing; fitting and sharpening should be carried out by a technician.
