Machined gauge-plate (vela) movement, Sirman spare part for the Leonardo 350 slicer. This is the mechanical assembly driven by the thickness knob: it moves the gauge plate relative to the blade and sets the slice thickness, with progressive travel over the first 3 mm of opening for fine thin-slice adjustment. Replace it if thickness is uneven, the knob is stiff, or the plate no longer returns to zero. Code AGWS19500154.
Machined gauge-plate (vela) movement, Sirman spare part for the Leonardo 350 gravity slicer (Ø 350 mm blade, cutting thickness up to 25 mm, 370 mm carriage stroke).
The gauge plate is the reference surface the product slides against before it meets the blade; the gauge-plate movement is the mechanical assembly that shifts it when the graduated thickness knob is turned. Turning the knob moves the plate away from or towards the blade, and it is that gap which sets the slice thickness. On the Leonardo 350 the movement is progressive over the first 3 mm of opening, a Sirman design detail that makes the adjustment far finer when working on thin slices.
Because the whole accuracy of the cut rests on this assembly, the part is machined: clearances, flatness and sliding surfaces are what keep the plate parallel to the blade through its full travel. A worn movement shows the typical symptoms, namely slices of uneven thickness, a knob that is stiff or slips without engaging, and a plate that no longer returns to zero and no longer closes flush with the blade at the end of service.
