It is the protective ring/disc that covers the rear edge of the blade and shields its cutting edge in the area not used for slicing: a key safety element that reduces the risk of accidental contact during use and, above all, during cleaning.
On the Mirra 300, a gravity slicer for bars, bistros and small catering businesses, the blade cover is made of aluminium alloy with anodic oxidation. Over time, knocks and drops can deform it or damage its edge, compromising the coverage of the cutting edge: in these cases it should be replaced to restore compliant protection.
