Professional oyster knife (ref. 9.009.093): short, rigid stainless steel blade for shucking oysters with precision and safety. The guard protects the hand if the blade slips off the shell. The tip enters the shell hinge and, with slight leverage, separates the two halves.

The oyster knife (ref. 9.009.093) is the dedicated tool for shucking oysters safely, replacing the dangerous and ineffective attempt to pry them open with ordinary kitchen knives. It is intended for professional use in fishmongers, fish counters, restaurants and gourmet kitchens, but is equally suited to home use.
Its defining feature is the short, rigid blade: short for controlling force and precisely reaching the shell hinge, rigid to apply leverage without bending or snapping when prying the two halves apart. The guard (the ring/protection between blade and handle) stops the hand if the knife slips off the shell, preventing the injuries typical of opening oysters.
The stainless steel blade resists the corrosion typical of this tool's working environment: the briny oyster liquor, food acids and frequent washing. Stainless steel keeps the tool hygienic and extends its service life.
How to use it: insert the tip into the hinge (where the two halves of the shell meet), apply a slight twist to pop the hinge, then run the blade along the adductor muscle to detach it and separate the shells.
When to replace it: replace it if the tip is bent or blunted, if the blade has lost rigidity (play, flex) or if the guard is damaged, since a worn knife increases the risk of slipping and cutting yourself.
