The smeriglio is the abrasive wheel fitted in the slicer's built-in sharpener: rotating against the blade edge, it restores and maintains a sharp cutting edge. The fine grit is intended for finishing the edge after coarse sharpening, giving a clean and precise cut. It should be replaced when the stone is worn, unevenly shaped, or no longer sharpens the blade properly.
