This is the grinding stone that, mounted on the sharpener arm of the flywheel slicer, comes into contact with the blade edge to sharpen it. With use it wears down, flattens or clogs with metal residue, losing its ability to hone the edge: when the blade no longer cuts cleanly despite sharpening, it's time to replace the stone. It must be chosen matching exactly the diameter, thickness and centre hole to ensure correct fit on the sharpener's pin and mounting.
