In the twin-emery sharpener of a slicer, the coarse-grain wheel performs the main sharpening of the blade edge: holding it in contact for about 30 seconds raises a perceptible burr along the edge, which is then removed by the fine-grain emery in 4-5 seconds. The emery wheels should be replaced when the abrasive surface is worn or glazed (smooth, no longer cutting) and, in any case, whenever the slicer blade itself is replaced, to keep the sharpening effective.
