The fine-grit grinding wheel (emery wheel) 55x9x12 is a spare part for the sharpener assembly of Berkel slicers. It is the wheel dedicated to finishing the cutting edge: after the coarse grinding stage it runs over the blade edge to refine it and make it perfectly smooth, removing micro-burrs and restoring a clean, sharp cut.

It works as a pair with the coarse-grit grinding wheel 55x15x12, which has the same diameter and bore and performs the sharpening/coarse grinding: the coarse wheel removes the worn metal, while the fine wheel completes the job by refining the edge.

When to replace it: the wheel should be replaced when it is worn down (reduced in diameter), clogged with metal residue, glazed or chipped: in these cases sharpening no longer leaves the edge smooth and the cut turns out ragged or serrated. Before purchasing, check the dimensions of the grinding wheel currently fitted (55 mm diameter, 9 mm thickness, 12 mm bore) to ensure a correct replacement.
