Eccentric cam for the Celme model 350 GPR slicer (also compatible with the 350/370 VPR and MPR models in the same range), with a 14 mm central bore. It is the rotating component that, together with the graduated knob, regulates slice thickness: as it rotates, it gradually shifts the blade or the support plate, setting the thickness of the slice.
It should be replaced when the slice thickness is no longer consistent, the graduated knob no longer matches the actual thickness being cut, or you notice play or wear on the cam profile.
