Adjustment knob with pin for Fimar and Celme mod. G300 gravity slicers, complete with guide disc. This is the knob the operator turns to set the slicing thickness: rotating it moves the carriage gauge plate relative to the blade edge, increasing or reducing the slice. The guide disc acts as the graduated reference/index for the adjustment.
The threaded pin transmits the movement to the thickness-adjustment mechanism; the knob gives an ergonomic grip and precise, repeatable setting. With prolonged use the pin can develop play, a worn thread or binding, and the knob can crack or wear out: when this happens the adjustment becomes inaccurate and the assembly should be replaced.
