The graduated clock-type knob is the component that lets you precisely adjust the slicing thickness on Sirman slicers, thanks to a graduated dial that shows the set value at every turn.

The pin fits into the machine's adjustment assembly, while the black bezel frames the dial, protecting the mechanism and keeping the graduated scale readable. Turning the knob moves the meat tray closer to or further from the blade, producing thinner or thicker slices as needed.

This is the correct replacement part for Sirman slicers fitted with this clock-type adjustment assembly. Replace it when the graduated scale becomes unreadable, worn or broken, or when the pin is worn and no longer provides a stable coupling, making thickness adjustment imprecise.
