The wide, sharp blade does most of the work in the kitchen and is one of the most used tools both in professional and home settings.
The 19 cm blade strikes a good balance between control and cutting capacity: long enough to handle wide cuts and bulky food, yet still manageable on the cutting board. The handle, together with the blade tang, should provide a firm, well-balanced grip during continuous use.
Maintenance and replacement: keep the edge keen with a honing steel and sharpen it periodically with a stone or sharpener. Replace the knife when the edge can no longer be restored, when the blade is chipped, corroded or bent, or when the handle becomes loose or damaged: a poorly cutting knife forces you to apply more pressure and is more dangerous than a well-sharpened one.
