Meat grinder knife mod. 42 in brazed stainless steel (added cutting edge for high output), flat-blade profile, 52 biro type. Cutting component to be paired with the perforated plate of the same size; a wear part, to be replaced when the cut is no longer clean.
Replacement knife for model 42 meat grinders, from the 8 / 12 / 22 / 32 / 42 mincer-mouth series (the number indicates the diameter of the grinding mouth, i.e. the size of the unit and of the matching plate). The cross-shaped knife rotates against the perforated plate and cuts the meat pushed by the worm screw: together with the plate it forms the cutting set of the grinder and is a wear part.
Brazed stainless steel version: stainless-steel body with a brazed (saldobrasato) cutting edge. Brazing bonds a harder cutting edge onto the stainless body, a solution designed for high output because it combines the corrosion resistance of stainless steel (food acids, frequent washing and sanitising) with longer edge retention. Flat-blade profile.
When to replace it: the cut heats or mushes the meat instead of slicing it cleanly, the edge is clogged/rounded, the blade shows play or is distorted. A worn knife cuts poorly, heats the product and strains the machine. For a correct cut the knife must always be paired with a plate of the same size and in good condition; knife and plate wear out together and are best assessed for replacement as a set.
