The hand wheel is the aluminium clamping ring nut that screws onto the mouth of the meat mincer by hand, locking the grinding assembly (knife and plate) against the machine head. Tightening the hand wheel gives the correct pressure between knife and plate, which is essential for a clean grind without overheating the meat; loosening it lets the assembly come off for cleaning or replacing worn parts.

This hand wheel is a Fama spare part for size 12 meat mincers (ref. F2132), made of aluminium for a lightweight, corrosion-resistant part that withstands the frequent washing typical of professional kitchen use.

Replace it when the internal thread wears out or gets damaged and the hand wheel no longer clamps the knife-plate assembly securely, when it works loose on its own during use, or if the part is cracked or heavily oxidised.
