Knife for cured meats ("coltello per salato") with a 32 cm (320 mm) blade and a black handle. It is the classic charcuterie/butcher's slicing knife, designed to slice cured meats, sausages and large aged products (salami, mortadella, ham, porchetta) and also suitable for cutting hard cheeses.
The long, straight blade allows a clean, even cut in a single pass, producing neat slices of consistent thickness. The black handle provides a firm, comfortable grip during prolonged use at the deli counter or in the butcher's shop.
Replace the knife when the blade shows nicks or deformation, can no longer be sharpened properly, or when the handle is chipped or loose: an intact edge ensures safe cutting and uniform slices.
