Replacement blade for professional slicers, external diameter 275 mm (27.5 cm), central hole 40 mm, 3 fixing holes, internal (blade-guard) diameter 218 mm and thickness 21.5 mm. Made of C45 steel with a dark-pewter PTFE (Teflon) coating.

Suitable for slicing cheese. The non-stick PTFE treatment reduces friction and product adhesion on the blade: it is especially suited to cheese and soft cured meats, which tend to stick to bare-steel blades, giving clean and even slices. C45 carbon steel offers a good balance between cost and edge retention for professional use.

The 40 mm central hole and the 3 fixing holes are the reference for checking compatibility with your slicer before buying: always compare external diameter, central hole, number of holes and internal diameter with the blade to be replaced.

When to replace it: a worn or out-of-round blade produces uneven, frayed or inconsistent slices and requires more force. Regular sharpening with the machine's sharpener extends its life; when sharpening is no longer enough, it must be replaced.
