The Z31 nylon gear is a transmission spare part for Berkel AV/35 slicers, fitted in the motor/gearbox assembly that drives the blade rotation. Made of moulded nylon, the plastic material absorbs shocks and wears preferentially compared to the mating metal gears, acting as a "mechanical fuse" in case of overload or sudden motor jam.
