Hand-operated flywheel slicers cut at low speed: the C45 carbon-steel blade should be kept sharp for clean, even slices, especially with cured meats and ham. Mounting is by a single central hole, typical of flywheel blades.

When to replace it: a worn or out-of-round blade produces uneven, frayed or inconsistent slices and requires more force. Regular sharpening with the machine's sharpener extends its life; when sharpening is no longer enough, it must be replaced.
