The grinding hole is available in a choice of diameters:

The hole diameter determines the grinding consistency: smaller holes for a fine mince, larger holes for a coarser grind. The plate should be replaced when the holes become worn, oval-shaped or rounded at the edges: in this condition the meat tends to be crushed and overheated instead of being cleanly cut, resulting in lower yield and a poorer-quality mince.
