Four-blade meat mincer knife, Unger system model 42, brand SALVADOR, in stainless steel. Always use as a pair with the perforated plate of the same model. Ref. SLATRI0508.
The Unger model 42 SALVADOR knife (ref. SLATRI0508) is the four-blade rotating knife of the grinding assembly in a professional Unger-system mod. 42 meat mincer. It works in close contact with the perforated plate: the knife cuts while the plate calibrates the mince, which is why the two parts must always be used as a pair and replaced together once they lose their edge.
In the Unger system the knife is an interchangeable element of the knives/plates chain that allows progressive grinding (first coarse, then fine), typical of professional machines used for large quantities or fibrous meats.
The blade is made of stainless steel: stainless steel resists the corrosion caused by meat acids and by repeated washing/sanitising, keeps its cutting edge for a long time and is suitable for food contact.
It should be replaced when the cutting edges are worn, blunt or chipped: a knife that no longer cuts cleanly crushes the meat instead of severing it, heats the mince, lowers the yield and strains the motor. For a correct result it must always be paired with the perforated plate of the same model.
